Chocolate Peanut Butter Balls

It would not be Christmas time in my family without our Chocolate Peanut Butter Balls. One year I decided to go all crazy and make brand new Christmas cookies and I didn’t make the Chocolate Peanut Butter Balls. That did not go over well. These cookies are delicious, so easy to make and will wow your guests.

Serves: 40
Ingredients
  • 18 ounces peanut butter
  • 1 stick unsalted butter (1/2 cup)
  • 2 cups powdered sugar
  • 4 cups crisp rice cereal
  • 24 ounces chocolate
  • Cooking Tools
  • electric mixer (I love our KitchenAid Mixer)
  • microwave-safe bowl
  • 2 spoons
  • wax paper or tinfoil
Instructions
  1. Cream together the peanut butter, unsalted butter and confectionary sugar.
  2. Add the crisp rice cereal and mix until combined.
  3. Form into small balls and place on cookie sheets lined with wax paper or tinfoil.
  4. Chop the chocolate into small pieces.
  5. Melt about ⅔ of the chocolate pieces in a microwave-safe bowl for 1 minute.
  6. If not melted microwave for another 30 seconds and stir.
  7. Add the rest of the chocolate pieces and stir until melted.
  8. Place a ball into the melted chocolate.
  9. Coat the ball with chocolate using two spoons to transfer it from one spoon to the next.
  10. Place each chocolate ball on a piece of tinfoil or wax paper to harden. This will take a couple of hours.

TIME TO MAKE CHOCOLATE PEANUT BUTTER BALLS!

Cream together the peanut butter, unsalted butter and confectionary sugar. Add the crisp rice cereal and mix until combined.
