Chocolate Peanut Butter Balls

- 18 ounces peanut butter
- 1 stick unsalted butter (1/2 cup)
- 2 cups powdered sugar
- 4 cups crisp rice cereal
- 24 ounces chocolate
- Cooking Tools
- electric mixer (I love our KitchenAid Mixer)
- microwave-safe bowl
- 2 spoons
- wax paper or tinfoil
- Cream together the peanut butter, unsalted butter and confectionary sugar.
- Add the crisp rice cereal and mix until combined.
- Form into small balls and place on cookie sheets lined with wax paper or tinfoil.
- Chop the chocolate into small pieces.
- Melt about ⅔ of the chocolate pieces in a microwave-safe bowl for 1 minute.
- If not melted microwave for another 30 seconds and stir.
- Add the rest of the chocolate pieces and stir until melted.
- Place a ball into the melted chocolate.
- Coat the ball with chocolate using two spoons to transfer it from one spoon to the next.
- Place each chocolate ball on a piece of tinfoil or wax paper to harden. This will take a couple of hours.
