Stained Glass Flower Cookie Pops

A few days ago my son came up with the idea for these cookies.  Quinn loves our original Stained Glass Cookies that we hang on our Christmas Tree and then gobble up as sweet treats.  Quinn thought we needed a spring version of our traditional edible ornament and came up with flowers and butterflies.  I thought popsicle sticks would make the cutest Springtime edible flower bouquet.  Admittedly, these cute cookies only lasted long enough in the vase for me to get a quick photo.  Our Stained Glass Flower Cookie Pops are cute and delicious!

Ingredients
  • sugar cookie recipe (I like this one from Better Homes and Gardens. I used half the dough and froze the other half for another day)
  • 6 lollipop pops or hard candies, crushed (look for ones without artificial food dye. We love YumEarth Organics!)
  • lollipop sticks
  • white chocolate chips
  • COOKING TOOLS

Begin by making your favorite sugar cookies.  Look for a recipe that is for cut-out cookies.  Roll out about half the dough on a floured surface making dough about 1/8 inch thick.  Use a flower linzer cookie cutter to make flower shapes.  There are a variety of cute cut out middles like ladybugs, butterflies, flowers and teacups.

Cover your cookie sheets with parchment paper and using a spatula carefully place the cookies on each sheet.  Trust me, it is really important to use parchment paper.  The melted lollipops will be impossible to get off the cookie sheet if you simply grease them with butter or oil.

TIME TO ADD THE STAINED GLASS TO YOUR FLOWER COOKIE POPS!

Preheat oven to 425 degrees F.  Time to crush up the lollipops!  My kids loved this part.  I placed three lollipops in each bag so they could each have a turn.  We used our meat pounder (you could use a hammer or large metal spoon) to lightly hit the lollipops.  Keep smashing until they are broken into very small pieces.

Take small amounts of the crushed candies and fill in the middles of the cookies.

Bake for the specified amount of time in your cookie recipe.  If you have an oven light this is the perfect opportunity to turn it on and let your kids watch the transformation of the candies.  “Look, what’s happening!  The candies looked bumpy outside of the oven, but now they are smooth.  Why is that happening?”

Take the cookies out of the oven and cool until the candy middle is hard.

TIME TO TURN THE STAINED GLASS FLOWER COOKIES INTO CUTE COOKIE POPS!

Once the candy hardens you can attach the lollipop sticks to the backs of the cookies.  Melt 1/2 cup white chocolate chips for 1 minute in the microwave.  Place a small amount of melted white chocolate on the back of the cookie and then place a lollipop stick in the white chocolate.  Let harden.

Our Stained Glass Flower Cookie Pops look really cute displayed in a glass mason jar.  Of course the cute display didn’t last long as I had my three little ones plus friends were eager to gobble up our creations!
