Despite the fact that I hate pumpkin pie I love the flavor of pumpkin in other recipes. I picked up a couple of boxes of pumpkin puree and am enjoying exploring creative ways we can use it in our cooking. Like all Homegrown Friends Recipes our Pumpkin Granola is easy enough for a child or novice cook to make. Dump all ingredients into a bowl, stir, pop in the oven and try to let it cool before enjoying a bite!

LET’S MAKE PUMPKIN GRANOLA!
- 3½ cups old fashioned oats (you can use quick oats but I don't love it as much)
- ¾ cup shredded coconut (sweetened or unsweetened)
- 1 cup slice almonds (optional, can omit or sub sunflower seeds)
- 1 cup pumpkin puree
- 3 tablespoons maple syrup
- 3 tablespoons brown sugar (can sub agave but will have a chewier texture)
- 2 tablespoons warm water
- 1½ teaspoons cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon salt
- ⅓ cup canola oil (can sub melted coconut oil)
- Combine all ingredients in a bowl and stir.
- Make sure there are no clumps of pumpkin puree.
- Pour mixture onto a greased cookie tray and bake at 300 degrees for one hour or until golden brown.
- Let cool.
- Enjoy on its own as a quick snack, with milk or on your favorite granola.
