Apple Oatmeal Pancakes

- 1 cup quick oats
- ½ cup flour (can substitute whole wheat flour)
- ½ tsp baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 tablespoon brown sugar
- 1 egg
- 1 cup milk of choice (I use almond milk)
- 2 tablespoons vegetable oil or melted butter
- 2 teaspoons cinnamon
- ½ teaspoon ground clove
- ½ teaspoon nutmeg
- 4 apples, peeled and diced (sauté apples in a teaspoon of oi/butterl over medium heat until they start to turn a caramel color)
- Begin by peeling and dicing four apples.
- Sauté the apples on medium heat in a teaspoon of vegetable oil or butter until the apples begin to turn a caramel color. Remove from heat.
- While the apples are cooking make the pancake batter.
- Combine the oats, flour, baking powder, baking soda, brown sugar and salt.
- Add the milk, melted butter/oil, egg, cinnamon, clove and nutmeg.
- Stir until combined.
- Add the sautéed apples to the pancake mixture and stir until combined.
- Spoon approximately 1-2 tablespoon amounts of pancake mixture onto a hot, greased griddle.
- Flip when golden brown.
- Serve with maple syrup. Enjoy!
