Healthy Chocolate Chip Banana Oat Cookie Recipe

Ingredients
  • Makes 12 cookies
  • 2 mashed bananas
  • 1 cup quick oats
  • ½ teaspoon vanilla extract
  • ½ teaspoon salt
  • 2 tablespoons coconut oil (if solid, warm in microwave for 30 seconds or until liquid)
  • ½-3/4 cup chocolate chips, depending how "chocolatey" you want them (I use Ghiradelli milk chocolate chips)
Instructions
  1. Mash 2 bananas in a bowl.
  2. Stir in oats, vanilla extract, salt, and coconut oil.
  3. Mix until combined. Stir in chocolate chips.
  4. Spoon walnut size amounts onto a greased cookie sheet.
  5. Bake for 8-10 minutes.
