Heart Butter Cookies with Strawberry Buttercream Frosting

Need a cookie to bring to a Valentine’s Day celebration? These are super yummy and perfect for parties, as gifts or just on a plate while sitting on your couch! My delicious butter cookie recipe mixed with homemade strawberry buttercream is the perfect combination. Valentine’s Day brings lots of chocolate treats. Why not mix things up with a bit with our delicious Heart Butter Cookies with Strawberry Buttercream Frosting?

Ingredients
  • Butter Cookies
  • 1 cup unsalted butter
  • ⅔ cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2½ cups flour
  • ⅛ teaspoon salt
  • ½ teaspoon baking powder
  • Strawberry Buttercream Frosting
  • 1 cup of your favorite strawberry jam (We love Bonne Maman)
  • 1 cup unsalted butter
  • 2 cups confectionary sugar (powdered sugar)
  • COOKING TOOLS
  • electric mixer (I love our KitchenAid!)
  • measuring cups
  • ½ teaspoon
  • ⅛ teaspoon
  • teaspoon
  • rolling pin
  • heart cookie cutter (large and small)
  • cookie tray
  • spatula
Instructions
  1. Preheat oven to 450 degrees F.
  2. Cream together the butter and sugar.
  3. Add the egg and vanilla extract.
  4. Mix in the flour, salt and baking powder.
  5. Roll out the dough on a floured surface.
  6. Cut out large hearts.
  7. Cut a small heart into half of the large heart cookies. Leave the other half as is.
  8. Using a spatula carefully transfer the cookies to ungreased cookie sheets.
  9. Bake at 450 degrees F for 6-8 minutes until slightly golden.
  10. Let cool completely.
  11. While the cookies cool it is time to make the Strawberry Buttercream Frosting.
  12. In an electric mixer beat together 1 cup of softened butter, 1 cup of strawberry jam and 2 cups of confectionary sugar until smooth.
  13. Once the cookies are cool spread a thin layer on one of the heart cookies without the hole.
  14. Place one of the cookies with a heart cut out on top.
  15. Repeat with the rest of the cookies.

TIME TO MAKE THE HEART BUTTER COOKIES WITH STRAWBERRY BUTTERCREAM FROSTING!

Preheat oven to 450 degrees F. Cream together the butter and sugar. Add the egg and vanilla extract. Mix in the flour, salt and baking powder. Roll out the dough on a floured surface. Cut out large hearts. Cut a small heart into half of the large heart cookies. Leave the other half as is. You can bake the tiny heart cookies too!

Let cool completely. While the cookies cool it is time to make the Strawberry Buttercream Frosting. In an electric mixer beat together 1 cup of softened butter, 1 cup of strawberry jam and 2 cups of confectionary sugar until smooth. Once the cookies are cool spread a thin layer on one of the heart cookies without the hole. Place one of the cookies with a heart cut out on top. Repeat with the rest of the cookies.
